• Pea & Ham Soup
    Gently fry off 1 chopped onion, 1 tblspn. garlic & about 800g. ham (or bacon) bones.
    Just cover with water & stock powder (bacon, beef or chicken)
    Add a chopped carrot, a stick of celery, a couple of bay leaves & 500g. split peas (you can use yellow, green or red. I like red because I always have them on hand & because they give the soup a good, warm colour)
    Simmer 2 1/2-3 hours, lid on, stirring occasionally.
    When peas are very soft, remove bones to cool.
    Toss in a cup of frozen peas to liven soup up a bit & give it some freshness :)) You could even add a splash of sweet sherry if you wished...
    Remove meat from bones, return to pot & puree well with stick blender.
    Add pepper, check for seasoning...taste, taste, taste.
    Mmmm, hot, hearty & delicious!
