Hot and Sour Heaven! …dinner made tasty!

 Hot & Sour Sauce

1 lt. lemon juice

4 cups sugar

1 cup fish sauce

1 tblspn. chilli

4 tblspns. Garlic

Combine & whisk vigorously until sugar has melted. Or pour all into a big squeezy bottle & shake vigorously…

Use with anything… where do you want the hot, sour, sweet, salty balance?

Suggestions for quick, easy,  light meals…dinner made tasty & healthy!

  • Use in anything with an Asian influence….chicken, shrimp wantons/Chinese dumplings
  • Vietnamese pork balls, pork strips, water chestnuts, vegetable stir-fries, chicken nuggets
  • Fish Fillet (cook one side, then lightly cover base of pan once fish is turned & let caramelize, watch closely as it can burn quickly once ready…yummm!)
  • Amazing over calamari….wok tossed, or dusted & deep fried .
  • So yummy with crab cakes or steamed fish, salmon or tuna pattiesIMG_0701

 

It’s a fabulous Salad Dressing …

  • throw together an Asian inspired salad, sear a handful of your favourite meat strips or seafood, &  generously drizzle over with hot & sour sauce…divine! fresh, quick, crisp & clean.
  • Thai-Style Eggplant Salad…arrange grilled eggplant on platter, sprinkle with sliced hardboiled egg & chopped shallots, drizzle with hot & sour sauce.
  • Or a cucumber salad with shallots, coriander & chopped peanuts.
  • San chow Bau…pork mince in lettuce cups, bean sprouts, roast peanuts, & lashings of hot & sour sauce
  • As a dipping sauce for prawns, rice paper rolls or poured over oysters au natural…
  • Fabulous salsa folded through some shredded mint, shredded toasted coconut & finely diced banana, spoon over many seafood’s….. particularly fantastic with Atlantic Salmon steaks, a gourmet meal in minutes.

TIP…you can add a little corn starch & cook to thicken if required for certain dishes. (we use rice flour to keep it gluten free.)

Keeps in fridge for months.  Pull it out & pour it over countless dishes, or as a dressing.
