A couple of months ago, a girlfriend & I volunteered at Byron Bay Blues Festival. Why not!?!! I think the world would be a whole heap better off if we all gave a little back to the community.Pecan Pie

My brother lived about 40 mins away so we elected to stay in the beautiful northern NSW countryside, with all the fringe benefits & comforts of home, instead of camping. A picturesque & tranquil balance to the full on pace of the festival.Pecan Pie

Travelling to & fro was fun, winding down or amping up, frequently getting lost on dirt roads, laughing lots, singing ridiculously. Making memories.Pecan Pie

We ate out often, my brother keen to show us his favourite dining discoveries. One of these well tested places was a cute little restaurant nestled amongst a pecan orchard. Nut laden trees lined the car park & temptation was too great.Pecan Pie

It brought fond recollections of childhood as we robustly gathered gorgeous fresh pecans that had landed on the ground, visions of yummy pecan pie, sweet scents wafting…anticipation building.Pecan Pie

A few days later we are back in Qld, back in the kitchen, ready to assemble our beauty. Always keen to handle food from paddock to plate, my little granddaughter, mallet in hand, joyfully helped smash out these tasty gems.Pecan Pie

This is a tried & true crust that I use on several bases, including the ever popular Lemon Curd Tart. It’s really very easy.

Pecan Pie:

Base:

  • 2 cups p. flour (gf if preferred)
  • 6 tblspns. ground almonds
  • 200g. butter
  • 8 tblspns. icing sugar
  • 3 egg yolks,
  • 1/2 tspn. vanilla
  • pinch of salt.

Work all ingredients together with fingertips to soft paste. Chill 1 hour. Blind bake 15mins. Remove rice/beans. Bake further 5mins.Pecan Pie

Filling:

Beat together…

  • 25g butter
  • 3/4 cup brown sugar.

Add in…

  • 4 lightly beaten eggs
  • 1/2 cup real maple syrup
  • 1 tspn. vanilla
  • pinch of salt.Pecan Pie

Line pie base with…

  • 1 small cup of nuts, flat side down, & gently pour in filling.

Bake 35-40 mins. Mixture will rise but fall again when cooling.Pecan Pie

Some believe that the French invented pecan pie soon after settling in New Orleans, after being introduced to the pecan nut by Native American tribes.

The Souths classic signature dessert, & Texas’ official state dessert, some also claim that pecan pie originated in Alabama in the early 1800s, & some attribute it to Louisiana, but there is no written documentation to substantiate it. Pecan Pie
