We are just learning to drive this new beast, & this is our inaugural run ) we’ll get better so hang in there….

Smoked Salmon & Bocconcini Tarts

The days are warming up & getting longer, so we find ourselves getting even busier, packing more in & still not having enough time for everything…

A quick & simple treat for dinner one night this week could be these tasty little Smoked Salmon & Bocconcini Tarts.

Start with a basic quiche mix, about one large egg for each tart, we’re making 6.

• 6 eggs, 1 cup cream, ½ cup milk, handful of grated cheese, pepper & pinch of salt.
• Line your sprayed tart tins with puff pastry & place them on an oven tray for ease of handling.
• Divide egg mixture between pastry moulds & build from there, with your selected ingredients.

We used sliced red onion, bocconcini wedges, a few baby capers & some smoked salmon draped over the middle. Pretty as a picture.
• Cook in mod. oven 180* about ½ hour, turning once during process.
• When a nice golden brown, remove from oven & add a slice or two of extra bocconcini, which will melt a little from the heat. And maybe a sprig of flat-leaf parsley….

• Serve with your favourite tossed leaves, perhaps add a few cherry tomatoes & some blanched fresh asparagus. Add a yummy dressing & you are done.

Little juicy rich-red tomatoes are just starting to burst with flavour & lush green spears of asparagus are crisp & plentiful at the moment. We love to take full advantage of these new spring colours, loaded with taste & texture, the kiss of summer promise.

Gorgeous….fresh, crisp & healthy! Enjoy…

If there’s any left, we love them cold for lunch the next day. And they are fantastic for leisurely weekend picnics too…a little taste sensation in its own plate :))
