Sweet Potato & Leek Frittata.

  •  Today’s easy idea for one night during the busy week is Sweet Potato & Leek Frittata.

It’s gluten free & vegetarian (low-fat too, depending on the amount of cheese you mix in.)You could serve it with a steak or a chop if you like. Or just with a salad. Works well cold too.

Also known as “KUMAR A” the sweet potato is so very versatile….one of our staples here at Food That Sings. We mash them, smash them, roast them in wedges & make Sweet Potato & Ginger Soup regularly.

You can make Tuna & Sweet Potato Patties, Shepherds Pie, even scones, just for a few ideas…google them. So good for you too!

Candied sweet potato is a traditional side-dish with roast turkey for Thanksgiving in America.

It also goes well with butter, cream, coconut milk, brown sugar, honey, orange juice & maple syrup. Or light meats like bacon, ham, chicken & turkey. And big meats like roast lamb, beef & bratwurst sausages. Spices like cinnamon, nutmeg, rosemary, oregano, turmeric & salt go hand-in-hand with this little gem.

Have a play with whatever you’ve got on hand!

We make this frittata in a white ceramic baking dish…serves about 8. But you can break it down to suit, or have leftovers.

   

  • Peel & slice 2-3 med. Sweet potatoes.
  • Cook in microwave 10 mins. or on stove until still just a little firm.
  • Meanwhile slice 1 large leek, put into greased dish with 1 tspn. crushed garlic, & bake off in oven,  just dry like that is fine
  • Now mix together 6 eggs, handful grated cheese , 2 cups milk, s&p.
  • Rough chop ½ bunch spinach, or use 1 pkt. frozen spinach, thawed, & mix in 400-500g. ricotta, 1 egg & a pinch of nutmeg
  • Potatoes are ready now, so throw into egg mix, along with the roasted leek & garlic. Toss together.
  • Spread about ½ this sweet potato mix into your baking dish, spread over with the spinach ricotta mixture, & pour over the rest of the potatoes.
  • Sprinkle the top with a little cheese if you like & pop into mod. oven til golden & firm, maybe 40-45 mins.

And there you go…yummo! Enjoy!

It’s also good cold for picnics or lunch boxes the next day too.

    • Yes Gillian, sweet potatoes rock! The awesome thing about this soup combination, apart from marrying beautifully, is that it works for gluten free, dairy free, vegetarian diets. We often use it at functions as it suits so many….:)) xx Just smash it all up in the water it was cooked in, full of goodness!

  4. This looks absolutely delicious! What type of cheese do you use? I bet this would taste good even without the cheese. I’ll have to try it out.

    • Good question Antoinette….I just throw a handful of grated cheddar in to help it all stick together in a yummy tasty way :)) But you can leave it out, or you could also sprinkle it with ricotta throughout. Personal preference, make it you own :)) Have fun xx

  6. Another great sweet potato recipe. They are so full of health I could eat then almost every day. My wife likes me to bake a couple and then when she returns from work she adds them to a little milk and eats them like a desert. I have seen her open a fresh baked sweet potato, put a scoop of vanilla ice cream in it and enjoy it after a meal.
