Hey guys, we’ve been pretty quiet on the recipe-posting front lately. Sorry…been a bit pre-occupied with the new site development & the Seven Saucy Secrets recipe book coming soon.
It’s a bit exciting, (& totally foreign,) as this will be my first book. So the world of editing, formatting, hiring & guiding someone else through this project, that until now has been in my mind, is truly a maze of intrigue.

But what of dinner tonight?
We made tarts! Fetta & Caramelized Onion Tarts. Bacon & Egg Tarts. Spinach & Ricotta Tarts. Mediterranean Tarts.
Let’s start with the basic egg mixture:
We use 1 egg per person, so for this exercise, we will use 8
- 8 eggs, 1 cup of cream, 1 cup of milk, 1 cup grated cheese, salt & pepper
Grab 2 sheets of puff pastry (or shortcrust), cut into 1/4, then push into individual flan tins (or you can make a family size one.)
Break the bits off that stick over the edge & invert into the gaps.
Press pastry together & prick the bottom with a fork.
Put on oven tray, & divide mixture equally between the dishes (not quite full.)
Now add your favourite ingredients….
Some cubed or crumbled fetta (or blue cheese) & some caramelized onions on top (be generous.)
Here’s how we do that (there are many ways.)
Caramelized Onions:
About ½ a medium onion per tart, so….
Other ideas:
You can run a strip of bacon around the outside edge of the tart & crack an egg on top, bacon & egg pie.
You could put in spinach & ricotta, maybe some pine-nuts (pretty expensive but very tasty)
We sometimes put in Mediterranean things, like olives, eggplant, semi-dried tomatoes, parmesan, mushrooms, zucchini…any of the good things that you love really.
Pop them in a mod. oven (180*) & cook about ½ hour or till they look golden & yummy.
You can see that they can take on any amount of flavours, or use up leftovers, like last nights’ roast or the weekends’ antipasto bits.
You can also set these little gems up the day before, & then just pop them into the oven when you get home from a hard day. A little side salad & you have a quick, no-fuss tasty evening meal.
Fabulous for light lunches…or picnics…or even starving school kids, in their bags, or for when they get home.
Knock some up this week…even the kids can help! And it’s an excellent stand-by!

These look delicious, Roni. I can’t wait to give them a try. I’ve never heard of brown sugar in carmelized onions before, but it sounds like a winner to me! Can you use a regular pie crust instead of puff pastry in the tart pan? I’m not sure what a shortcrust is??
Sure you can Euls…whatever kind of pie crust you prefer. And we use brown sugar as a preference in most things we caramelize….it’s yummy! (& a little bit naughty :)) Roni xx
