Mid-Week Meal Ideas!

Thai Fish Cakes…super easy, super tasty! It’s so easy….all in the processor! Thai Fish cakes are the most often requested tasty little morsels on our Food That Sings catering menu!


You can make mini ones, like we do for functions. You can put them in muffin tins for a meal size & cook them in the oven. Or you can pan fry them any size you wish.

We stack smaller ones in two for cabinet displays in cafes, so you can see you can make your own preferences on size, & presentation.

You can also make them for any amount of people…we will give you the recipe for about 6. No need to be to exact with ingredients either, a bit of this, a bit of that. Don’t worry if you only have half a bunch, or you’ve slipped a little when pouring…it will be all good :))

So for a super easy, super quick & tasty mid-week meal, here’s how….

Thai Fish Cakes:

  • 1 kg. light fleshed fish fillet (we often use Basa fillets)
  • !/2 bunch coriander.
  • 1 tblspn. each crushed garlic & ginger.
  • ¼ cup each sweet chilli sauce & fish sauce.

Chuck it all in the processor, whirl for a moment (we like to keep a bit of texture) & there you are!!!

Pop it into sprayed tins & cook in mod oven till firm & just changing colour. Or fry on medium/low heat in pan till golden both sides.

They are scrumptious, & good for you!

Serve with salad, rice, steamed veggies, whatever takes your fancy.

At functions we dress ours with a tiny dollop of sour cream, dill, pink pickled ginger, black sesame seeds, some lime wedges, even a fine-chopped banana & mint salsa…any of the things that go with fish & look pretty together.
