Here is our all-time, absolutely fabulous basic Pesto recipe….


  • 1 bunch basil
  • 1 bunch parsley
  • ½ cup toasted pistachios
  • ½ cup toasted pine-nuts (or macs)
  • 1 generous tspn.  garlic (or 2 big cloves)
  • ¾ cup grated parmesan
  • ¼ cup lemon juice
  • Pinch of salt
  • About ¾ cup olive oil (or oil of choice)

Put everything (except oil,) in processor, nuts on top to hold it all down, & go!  Pour oil in as it whirls around,  should  take less than a minute.

Once you have done this a couple of times, you will have mastered the taste & consistency to your liking. Then the applications are endless, limited only by your imagination.


A traditional Sicilian sauceSalmoriglio.

#foodforfun …the most exquisite sauce, called Salmoriglio. A traditional Sicilian sauce, used to flavour meats or grilled fish…

lemon juice, freshly squeezed, the most beautiful green extra virgin olive oil, finely chopped parsley & oregano straight from the garden, salt flakes.

Oh my goodness…try it!


I love’s just a couple of ideas.

Tonight it’s Margarita. Some fresh basil, cracked pepper, cooked on the barby. Mmm yum! What do you love on yours?

And the next pizza ready for devouring is mushroom, olive, artichoke & fresh thyme, a spread of aioli, a sprinkle of parmy & a crunchy crust :))



Guess what we’ve got in the slow cooker? Imagine the scents wafting through the house….
Slow Cooked Balsamic & Honey Pork

4-6 servings. Prep 10 mins. Cook 9 hours

1-2kg boneless pork shoulder
1/2 cup honey
1/2 cup balsamic vinegar
1/4 cup plum jam
1/4 cup hoisin sauce
1/2 cup chicken stock
3 cloves crushed garlic (I used handful of whole cloves)
1/2 cup chopped onion
Combine & pour over pork in slow cooker. Cook 8-9 hours
1 tblspn arrowroot (or cornflour) & splash of water.
Whisk this through sauces after pork has been removed. Cook few mins.IMG_7520
I also threw in a halved fennel bulb & 2 sweet potatoes in their skins with this mix, experimenting.
We served ours with braised purple cabbage & little boiled chats.
Also good piled on pasta, or on buns with coleslaw….


Best Ever Gluten Free Orange & Almond Cake:

*Gently boil 2 oranges, covered, for about an hour or so…
*Combine in bowl 250g. almond meal, 200g. castor sugar, 1 tspn. baking powder & 6 eggs.
*When oranges have cooled a little, remove stem bit from the top, chuck them in the processor & whizz them up.
*Mix together & place in lined tin, bake in mod-slow oven till skewer comes out clean…about an hour-ish.

It’s such a lovely, moist cake…you could just glaze it with some warm apricot jam & some toasted almonds, flaked or slivered.

Or smother it in deliciousness :))

Cream Cheese Icing
*125g. cream cheese, 60g. butter, both softened to room temperature.
*Beat till smooth & add 2 tspns. Vanilla essence
*Gradually beat in 2½ cups icing sugar…holy yumminess!
