Recipe romance! Monday mid-week meals…

A couple of soups for us today…Sweet Potato & Ginger Soup AND Leek & Cauliflower Soup!

Since it’s raining here at the moment, (& we are so grateful for that!) we decided to make a couple of wonderful soups.

We’ll also throw some grains, herbs & polenta goodness in the bread maker…
Oh My Goodness!! The smell wafting through the house is divine! And the anticipation…it smells like nurture!

We will have an array of choices tonight…

It’s so rewarding to be able to pull a good hearty soup out of the fridge when the hunger pangs start rattling.

With a good surge of heat & a slab of crusty toast, it cures many ails.

A spot of lunch, a quick fix when a friend drops by, a bowl for the kids after school.

Get those veggies into them, warm the cockles of their hearts, don’t spoil their appetites for dinner…soup answers the call of so many appetites.

In these recipes, both are gluten-free, sugar-free, dairy-free & vegetarian, for all those who need to know :))

You could add a swirl of cream, a dollop of sour cream, a splash of sweet chilli, a pinch of grated parmesan, a spoonful of chutney, a sprinkling of snipped chives, a scattering of deep-fried shallots, some cracked pepper, or anything else your little taste buds desire…

Sweet potato & Ginger Soup

In a big pot on a low heat, sweat off (slowly cook,) some finely chopped onion & some crushed ginger.
Let’s say ½ an onion & a generous teaspoon of ginger…hard to know because sweet potatoes come in all sizes.

Peel & chop up your sweet potatoes, say 2 medium sized ones. (You will adapt your flavours to suit once you’ve done it a couple of times.)
Toss them into your pot with the onion & just cover to top of veggies with water.

This means you get to use all the cooking water with all the goodness still in the soup, instead of drained away down the sink.
Add salt & pop on a lid. (We use veggie stock.)

Simmer away until they break up when pushed. Stick the hand-held blender in & beat till smoothish.
(We like to leave a little bit of texture.)

And Voila! Does it need more salt? Does it need Pepper? Some chopped parsley? Your call…

Leek & Cauliflower Soup

Pretty much the same process as above…

Gently fry off a couple of cloves chopped garlic & your sliced leek.
Add your cauliflower flowerettes, stalks & all, & enough water to just cover.

You can add diced potato if you want extra thick & hearty soup.
Some salt or stock powder.

Cook till soft again, juzz with the stick blender & adjust seasoning to suit…
I like mine with Romano cheese, pepper & some chia seeds.
Love that little random crunch.

A few chives across the side looks so pretty!
